University of Minnesota students gathered for the annual lettuce-eating competition in early May. About two dozen students fought for the title of Head Lettuce and the opportunity to serve as the president of the Lettuce Club. Ethan Lie was crowned the winner after eating a head of lettuce in 3 minutes and 32 seconds. “Right hands on your lettuce and left hands in the air, lettuce compete today with honor, glory and most importantly, a mild appetite for leafy vegetables,” competitors chanted before the contest started.
