Looking for something to do with all that Easter candy? Try this soft & chewy YUMMY mini egg recipe! Not only is this recipe great for the Holidays but its’ a great way to make use of all that Easter candy!
Ingredients:
- 2 1/2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 10.5 ounce bag of Cadbury mini eggs
- 1 1/4 cup chocolate chips
- 2 teaspoons of vanilla
- 1/4 teaspoon cinnamon
- 2 large eggs
- 3/4 cup sugar
- 3/4 cup brown sugar
- 1 cup butter (room temperature)
Instructions:
- First heat oven to 375 degrees and move oven rack to the middle.
- Place parchment paper on cookie sheet.
- Mix together flour, salt and baking soda.
- In a large bowl mix butter, vanilla and sugars until smooth and creamy. Slowly add in eggs one at a time and mix thoroughly.
- Slowly add the flour mixture and combine with the wet ingredients.
- Fold in chocolate chips.
- Using a a small spoon, round cookie dough into balls and place onto cookie sheet.
- Lightly press 3-4 mini eggs on each cookie.
- Bake cookies for 8-10 minutes.
- Place on cooling rack.
TIPS: Cookies may seem like they are not fully finished when you take them out but it is important to not over cook them. They will continue to bake while on cooling rack. Cookies may seem crowded once you place the mini eggs on top but do not worry they expand.
