I started finding easy recipes that picky eaters would eat, because of my HUSBAND. Straight up! Even my 4 year old is less picky than him! It helps that I would find recipes of things he would actually eat. For example, the bourbon chicken you get at the West Acres Mall.
This bourbon chicken recipe is gosh darn close to the stuff you get at the mall, AND my husband actually LOVES it! So I wanted to share in case you’re in the same boat as me.
BOURBON CHICKEN (without the bourbon)
Step 1: Cook 2 chicken breasts any way you like (I love to grill them)
Step 2: Combine the below ingredients in a saucepan to make the sauce (I make a double batch so you’d want to double everything if your serving up to 4 ppl):
- 1 garlic clove (or a heap of garlic powder)
- 1/4 tsp ginger
- 3/4 tsp crushed red pepper flakes (add more or less depending on how spicy you want it)
- 1/4 c apple juice
- 1/3 c light brown sugar
- 2 tbs ketchup
- 1 tbs cider vinegar
- 1/2 c water
- 1/3 c soy sauce
- (Optional) a dash of corn starch to make it thicker
Step 3: cook the sauce on medium heat until well mixed & dissolved
Step 4: cube the chicken, add it to the sauce, and cook until it comes to a hard boil.
Step 5: simmer for 20 minutes to let the sauce thicken, and then pour it on top of rice
