Moist Banana Chocolate Chip Muffins are my husbands favorite! Instead of throwing out those rotten bananas turn them into some delicious muffins. After trying many different recipes and compiling the best parts of each recipe and adding my twist on them I found our family’s favorite muffin recipe. I usually make enough to last a couple weeks and throw half or more of what I make in the freezer. They taste just as fresh as they did when you originally made them. This is also a fun recipe to make with the kids. As you can see my helper was pretty much useless last time we made these muffins.
Ingredients:

3 cups of all-purpose unbleached flour

2 cups of sugar

2 teaspoons baking soda

1 teaspoon salt

1/4 teaspoon cinnamon

2 teaspoon vanilla
-
6 mashed bananas (not overly mashed)

2 eggs
-
1 cup of oil
-
2 cups chocolate chips
Directions:

Preheat your oven t0 350°F

Lightly grease muffin pan (be sure to get every part so they don’t stick). I prefer to use a silicone muffin pan.

In a Large sized mixing bowl mix together flour, sugar, salt and baking soda.

Mix eggs, oil, vanilla and bananas together.

Combine dry and wet mixture.

Using a spatula fold in chocolate chips. Mix chocolate chips in well but do not over mix. (Leave some out for later).

Spoon 1/4 cup of batter into pan.

Sprinkle remaining chocolate chips on each muffin cup.

Bake muffins for 12-15 minutes. Using toothpick stick muffin to see if it comes out clean.

Remove from oven and let cool for 5 minutes before taking out and moving to cooling racks.
