YUM: Mac N Cheese Stuffed Meatballs

... Now, like most husbands, I HATE Pinterest . I hate Pinterest for being the final word on all our meals and home decorating decisions. Nothing says " pain and agony " like standing in the middle of the grocery or furniture store waiting for your wife to consult her food and design bible on her smartphone.

When she said to me, "Mac N Cheese Stuffed Meatballs", I thought... "Finally, my prayers have been answered"; when she added, "I found them on Pinterest"... I died a little on the inside.

And then our journey began.

1 egg
1 pound lean ground beef
2 tablespoons chopped white onion
1/3 cup Panko bread crumbs
1/2 cup shredded cheddar cheese
1/2 teaspoons fresh ground black pepper
10 cheddar cubes
1 cup prepared macaroni and cheese (Kraft)

*Preheat oven to 375
*In a large mixing bowl place the beef, bread crumbs, egg, shredded cheese, onion and pepper. Mix it with either a spoon or by hand, until everything has mixed well into the meat. Next line your pans with tin foil (spray well with something like Pam to prevent sticking -- it WILL stick if you do not). After you've done this step, take a hand full of meat and roll it in a ball, after you've rolled the meat into a ball you'll want to flaten it out like a panacake. This is where you'll take a tablespoon of macaroni and place it in the middle. Be the judge of the size of meatballs, and work the meatball with the macoroni back into a ball and place back onto the pan. Repeat until meat is gone. Next step is the oven! I kept mine in the oven for about 28 minutes.
