Bacon Wrapped Dates

It's the holidays! Time for festive dinners and parties with family and friends. If you need a really special recipe for an appetizer you HAVE to try this one! Bacon wrapped dates...they are so amazingly  delicious! This will really impress your friends and family!


 For the bacon wrapped dates:

1 pound dates

4 ounces goat cheese

4 pieces applewood smoked bacon

1/4 cup unsalted roasted pistachios (I found these in the bulk section at my favorite grocery store)

To wrap the dates:

4 ounces goat cheese

10 pieces of applewood smoked bacon

To prepare the bacon wrapped dates:

Fry four pieces of bacon, remove from bacon grease. Reserve the bacon drippings. Remove the seeds from the dates, (I found pitted ones) Crumble bacon into smaller pieces, and place in a food processor with 4 ounces of cheese, pistachios and the dates. Puree' the ingredients.  (You may want to puree' in batches to make it easier on your food processor.) 


If the mixture is too thick, add the reserved bacon drippings. Cook the other 10 pieces of bacon halfway, so they are still limp. Cut each piece of bacon in half. Take a spoonful of the mixture, roll into a ball  and add a small amount of goat cheese, then wrap bacon around the ball, secure with a toothpick.  

Bake at 350 degrees for 4-5 minutes!
